Banana Scones


These Banana Scones are not really scones, I’m not sure why we call them that, but they are our go-to travel breakfast. I always make a dish of these and bring them with us for any overnight car trips because they are super easy to make, travel well, and need nothing added to them in the morning (like milk for cereal).

These are also great if you only have one sad little banana left on the counter, just halve the recipe and use a 9×9 pan.

2 ripe bananas
1/2 cup unsweetened applesauce
Scant T baking powder
1/2 cup maple syrup
1 1/2 cup oats
1 1/2 cup flour (I use spelt)
2t cinnamon
2t vanilla

Mash bananas with wet ingredients. Mix in dry ingredients. Spread batter evenly in a greased 8 x 11 pan. Bake at 350 degrees for 20-25 minutes.
