Happy Things

A few things that are making me happy this week.

  1. Halloween costumes are just about ready and I love them. I may grumble a little about making them but I do enjoy the process.
  2. We enjoyed the sights and sounds of a gushing waterfall today.
  3. I made a huge To Do list at the beginning of the week and am crossing off quite a few finished tasks.
  4. The leaves are changing.
  5. I had toast and jam for breakfast this morning, which started the day off right.

  1. I made soup last night. Potato, onion, carrot, water, salt. I was the only one eating it so I left the skins on the potato (such a rebel). Leftovers for lunch today!
  2. We picked out books at the library today. We often take libraries for granted but they really are an amazing resource.
  3. It rained today and I have missed the rain.
  4. I am working on a washcloth knitting pattern that I think will be super soft and absorbant.
  5. I dropped my ATM card between my car and the machine and was able to deal with it quickly and laugh about it.

  1. It is Fall, which means I can pull out my warm, cozy clothes.
  2. I am playing the piano again after a decade or two without. I am no concert pianist but am loving being able to play again.
  3. I have been enjoying a meal plan that I put together. Each night of the weekend has a designation (pizza Saturday, pancakes on Friday, leftovers on Thursday, pasta on Wednesday, soup or casserole on Tuesday, bean burgers on Monday, soup or casserole on Sunday) and I pick from a few recipes based on what needs eating. So far it is working better than more specific plans I have tried in the past.
  4. I made a Chickpea and Broccoli Casserole from Vegan With A Vengeance that reminded me a bit of my mom’s Chicken Divane casserole that I enjoyed as a kid. Definitely hit the comfort-food spot!
  5. My compost bin contents appear to be composting. I know this is totally the point and should come as no surprise, but I apparently needed physics proof.

  1. I finished knitting a cotton market bag for an unknown recipient at Christmas. I am happy it is finished and happy to move on to knitting something else.
  2. We returned from vacation to some bright red tomatoes in the garden. They are a delicious lunchtime treat!
  3. A happy afternoon spent crafting wind chimes with baked clay. A little flour, salt, water, and some ancient food coloring (I don’t actually put it in food) and we had a few hours of entertainment.
  4. We had leftover macaroni and vegan cheese sauce with roasted broccoli for dinner. Tasty and easy!
  5. My compost bin seems to be turning my food and yard scraps into compost. I am very excited!

  1. I made both peppermint iced tea popsicles and coffee popsicles and both are a hit. Super easy, just make your iced tea or coffee, as usual, and pour into popsicle molds.
  2. We headed to the library this week to pick up a book I had on hold and checked out a stack more. The library is likes shelves of endless possibilities.
  3. I made vegan parm and pasta for dinner tonight. Vegan parm is super easy (there are a ton of recipes out there, this is just what I use). 1 cup raw sunseeds, 1/3 cup nutritional yeast, 3/4 tsp salt, 1/4 tsp garlic powder, 1/4 tsp onion powder. Blend all ingredients in a food processor until somewhat powdery and sprinkle on your pasta.
  4. We are enjoying tomatoes and beans from the garden. We have a huge weed issue in the garden, including lots of Morning Glory and other invasive vines that try to choke everything out. I have plans for keeping the weeds down next year (rocks, mulch, etc.) but right now I am just happy when anything grows.
  5. I am putting together a Christmas To Do list so I can get started early and make gifts from supplies already in my house. Declutter my house, enjoy working on projects, reduce waste; a win all around!

  1. I rode my unicycle unassisted for a distance today and it was as amazing as I thought it would be. I’ve been learning to ride with hiking poles to assist (obligatory caution: note that some people caution against using poles for fear of injury when falling).
  2. Easy dinner of rice and black bean salad. 
  3. Enjoyed the first tomatoes from the garden. I wish I could grow them year round.
  4. I am reading The Lightning Thief and am enjoying it so far.
  5. The first apples of the season were at the market. Sweet, crisp apples.
